Ingredients
  • 1/4 cup Butter (Do Not substitute) !
  • 2 pounds FRESH Mushrooms, any kind or a mixture of several kinds, SLICED
  • 1 large onion, chopped
  • 1 cup celery, chopped
  • 1/2 cup Green pepper. chopped
  • 1/2 cup Red pepper, chopped
  • 1/2 cup Mayonnaise
  • Salt and Pepper, to taste
  • 8 slices Wheat-Berry Bread, cut into 1 inch pieces
  • 3 large Eggs, lightly beaten
  • 1 and 1/2 cups Whole Milk (or) half and half
  • 1 (10 3/4 ounce) can Cream of Mushroom soup (UNDILUTED)
  • 1 cup Cheddar Cheese, grated

Directions
  1. MELT Butter in a large skillet
  2. ADD Mushrooms, Onion, Celery and Peppers , cook over medium heat, Stirring CONSTANTLY, until tender;
  3. DRAIN Well
  4. STIR in Mayonnaise, Salt and Pepper
  5. PLACE half of Bread evenly into a lightly greased (or use PAM) 13 x 9 x 2 baking dish
  6. SPOON mushroom mixture evenly over Bread. Top with remaining Bread
  7. COMBINE eggs and milk
  8. POUR over Bread
  9. COVER and CHILL at least 8 Hours
  10. When ready to Bake
  11. POUR (UNDILUTED SOUP) over Souffle, top with Cheese
  12. BAKE at 350 degrees for 50 minutes to 1 hour, or until baked through and bubbly.
