Turtles Colcannon Potatoes Recipe

Ingredients

4 Large Russet Potatoes

1/2 stick Butter (4Tbsp)

1/4 cup Half&Half

1/2 cup chopped Cabbage

Fresh Chopped Thyme (1Tsp)

Fresh chopped Rosemary (1Tsp)

Fresh chopped Parsley (2Tbsp)

Salt & Fresh Grounded Pepper to taste.

Directions

Peal and chop up potatoes in to 2 in. chunks boil in med size pan till done

While Pots are cooking saute Cabbage in the butter on Med Low heat till cabbage is tender do not brown butter. (set aside)

Strain Potatoes once done and put in a large bowl and mash them

Add all ingredients and mix well by hand add salt and pepper to taste.

I made this once a long time ago, and it's really good, although I never tried it with the herbs. This sounds a lot better than the recipe I tried. Not to answer for turtle66 or anything, but I don't think the half & half would make this dish terribly rich, just creamier.
