A lowfat Pesto recipe from Rosie Daley's "In the Kitchen with Rosie. " I've been using this for about 14 years for all my "pesto needs." Great on Pizza or added to sauces.

Ingredients
  • 1 1/2 Cups Fresh Basil Leaves
  • 2 Garlic Cloves, Peeled, or up to 5 cloves. or to taste.
  • 1/4 Cup Pine Nuts
  • 1/4 Cup Freshly Grated Parmesan Cheese
  • 1/4 Cup Freshly Squeezed Lemon Juice

Directions
  1. Put Basil, garlic, pine nuts and Parmesan cheese in a blender or food processor.
  2. Turn the machine on and drizzle in the lemon juice.
  3. Continue to Puree until a smooth paste is formed.
  4. This makes about 3/4 cup pesto
  5. f you want the fat, just add all the olive oil you want! I make large batches when the Basil's ready and then freeze it in small amounts to use all year.
