Key Lime Mousse With Jetts Gingersnap Cookies Recipe

Adapted from the Nestle Very Best Baker recipes. Try this with my recipe for "Only a Matter of Time Before Gingersnaps" cookie recipe.

Ingredients
  • 1 teaspoon unflavored gelatin
  • 1/4 cup boiling water
  • 1 can(12 fl. oz) evaporated milk
  • 4 oz. cream cheese, softened
  • 1 jar (7oz.) marshmallow cream
  • 1/3 cup powdered sugar
  • 2 tablespoons key lime juice
  • 2 teaspoons key lime zest (Use microplane for extra fine zest)
  • Additonal lime zest(optional)
  • ***8 Gingersnaps cookies*****
  • Refer to "Only a Matter of Time Before Gingersnaps" cookie recipe on my food page.

Directions
  1. SPRINKLE gelatin over water in small bowl; stir to dissolve.
  2. Cool slightly.
  3. Pour evaporated milk into medium mixer bowl.
  4. Add gelatin and stir.
  5. Place bowl in freezer for about 30 - 40 minutes or until ice crystals form around edge of bowl
  6. BEAT cream cheese in medium bowl on high until light & fluffy
  7. Add marshmallow cream; beat until light & fluffy, set aside
  8. REMOVE chilled evaporated milk from freezer.
  9. Beat on high speed for 1 to 2 minutes or until stiff peaks form
  10. Slowly add powdered sugar and continue beating for 1 minute
  11. Add beaten cream cheese mixture to whipped milk; beat until blended.
  12. Stir in lime juice and lime zest
  13. Spoon into serving dishes; refrigerate at least 1 hour
  14. Sprinkle each serving with lime zest, if desired.
  15. Insert cookie into each mousse
