What do you do with five lbs. of sliced pepperoni? Why you fry some and make pepperoni, lettuce and tomato sandwiches, of course!

Ingredients
  • 20 slices of pepperoni
  • 4 slices of best ripest tomato you can get your hands on
  • mayonnaise
  • iceberg lettuce
  • four slices of whole wheat soft bread

Directions
  1. Pan fry the pepperoni in skillet over medium heat, until the fat is rendered.
  2. Dump to cool on double thickness paper towels. Pat off extra fat.
  3. Make a standard blt, but use the crispy pepperoni instead of bacon. No pepper or salt needed, You get enough from the pepperoni.

This sounds good I actually have a ton of presliced pepperoni from last weekend and nothing to make for dinner tonite Ill give this a whirle.

That's too funny, notcho - my mother actually introduced me to "fried pepperoni" several years back...I thought she was NUTS, until I tasted it - it's amazing when fried...crispy like bacon, salty and sooooo good. I never thought to use it in a sandwich - we just ate it "as is"...it would be FANTASTIC as a PLT - I cannot wait to try this!! You are too much, girl...


My sisters and I used to make "cooked salami" sandwiches too!!! We used the microwave but the result was the same...soooo yummy and crunchy.
