Spinach And Feta Pie With Roasted Pine Nuts And Red Bell Pepper

This came to me in a flash it has rich color and bright flavor. A one dish meal you want seconds and thirds.
Ingredients
- 1 9 inch whole wheat pie crust shopping list
- 2 packages organic frozen spinach thawed and well drained. shopping list
- 4 oz of organic red bell pepper chopped shopping list
- 3 eggs beaten shopping list
- 1oz of pine nuts lightly toasted shopping list
- 1 four oz package of feta cheese shopping list
- 4 tablespoons of cream shopping list
- 1 teaspoon of sea salt shopping list
- 1 teaspoon of lemon pepper shopping list
- A few grinds of fresh nutmeg shopping list
How to make it
- Preheat the oven to 325 degrees
- In a bowl, mix all of the filling ingredients
- Place the pie crust into a cookie sheet and add filling
- Bake for approximately 35 to 40 minutes until filling is set.
- Remove from oven and cool for ten minutes before serving.
