Russ Western Breakfast Sandwich

I learned to make these when I was a teenager and working short order at Russ' Lunch.....He taught me a lot about breakfast cooking and for that I honor him with this post
Ingredients
- 3 eggs shopping list
- 2 tbls. milk shopping list
- 1/4 cup ham, diced shopping list
- pepper and onion, chopped and as much as you like shopping list
- 2 slices American cheese shopping list
- 4 slices wheat bread shopping list
- salt and pepper to taste shopping list
- butter to cook shopping list
How to make it
- Put eggs and milk in bowl and beat vigorously until it foams
- Add ham, onion and peppers and mix together
- Heat large skillet with butter to medium heat
- Add egg mixture to skillet
- Tilt pan and with spatula pull mixture away from edge of pan to let mixture move to pan surface
- Turn heat to low and let cook until golden brown
- Flip over
- Top with cheese
- Put lid on skillet and let cook until golden brown
- Toast bread
- Half egg and put onto toast
- Top with other slice
- Love a dash of hot sauce on it.
