I learned to make these when I was a teenager and working short order at Russ' Lunch.....He taught me a lot about breakfast cooking and for that I honor him with this post

Ingredients
- 3 eggs
- 2 tbls. milk
- 1/4 cup ham, diced
- pepper and onion, chopped and as much as you like
- 2 slices American cheese
- 4 slices wheat bread
- salt and pepper to taste
- Butter to cook
Directions
- Put eggs and milk in bowl and beat vigorously until it foams
- Add ham, onion and peppers and mix together
- Heat large skillet with butter to medium heat
- Add egg mixture to skillet
- Tilt pan and with spatula pull mixture away from edge of pan to let mixture move to pan surface
- Turn heat to low and let cook until golden brown
- Flip over
- Top with cheese
- Put lid on skillet and let cook until golden brown
- Toast bread
- Half egg and put onto toast
- Top with other slice

I don't know why, but I just love breakfast sandwiches. Even better than breakfast on a plate. I guess its because I prefer to eat breakfast while I'm cleaning or up doing something. Since the kids are grown and gone. I have gotten used to this coustom. ^5....Cheryl

I've been making a variation of this recipe for years. Eggs, ham, green peppers, onion, salt & pepper. Beat eggs well before adding other ingredients. I used to serve it on toast with ketchup. Delicious either way you prepare it!
