I learned to make these when I was a teenager and working short order at Russ' Lunch.....He taught me a lot about breakfast cooking and for that I honor him with this post

I don't know why, but I just love breakfast sandwiches. Even better than breakfast on a plate. I guess its because I prefer to eat breakfast while I'm cleaning or up doing something. Since the kids are grown and gone. I have gotten used to this coustom. ^5....Cheryl

I've been making a variation of this recipe for years. Eggs, ham, green peppers, onion, salt & pepper. Beat eggs well before adding other ingredients. I used to serve it on toast with ketchup. Delicious either way you prepare it!
