Mexican Pot Roast Recipe
This is my Aunt Jackie's recipe with my Step Mom's instruction. Excellent!!

Ingredients
  • 3-4 lb - Beef chuckroast
  • 2 Tbsp. - cooking oil
  • In bowl mix following:
  • 2 - 14 oz cans- diced tomatoes
  • 2 - 4 oz cans - chopped green chilis
  • 1/2 cup of water
  • 1 packet of taco seasoning mix
  • 2 tsp. - sugar
  • 4 tsp. - beef boullion granules

Directions
  1. In electic fry pan or (dutch oven) brown meat on both sides in hot oil (sear).
  2. Pour mixture over roast and simmer for 2-3 hours (until tender).
  3. Remove roast - make thickening for mixture (make gravy as you would any other dinner).
  4. It goes really good with mashed potatoes or mexicorn
