Chana Saag Curry

- 1 onion, chopped shopping list
- 12 oz fresh green beans, topped, tailed and halved shopping list
- 1 tablespoon curry paste shopping list
- 1 tsp ground cumin shopping list
- 1/4 tsp cayenne pepper shopping list
- salt to taste shopping list
- ground black pepper to taste shopping list
- 1 tsp garlic powder, or to taste shopping list
- 1 cup vegetable juice shopping list
- 2 medium russet potatoes, chopped and par-boiled (about 5 minutes) shopping list
- 2 cups cooked garbanzo beans shopping list
- 10 oz frozen and thawed chopped spinach shopping list
- 1 tsp dried basil shopping list
How to make it
- In a large saucepan over medium heat; saute onions and green beans in 1/4 cup water until onion is translucent.
- Stir in curry paste.
- Cook, stirring, for 5 minutes.
- Add cumin, cayenne, salt, pepper and garlic.
- Stir in juice, potatoes and garbanzo beans, cook 5 minutes.
- Add spinach and cook until hot.
- Remove from heat and stir in basil.
