Ingredients
  • 1 onion, chopped
  • 12 oz fresh green beans, topped, tailed and halved
  • 1 tablespoon curry paste
  • 1 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • salt to taste
  • ground black pepper to taste
  • 1 tsp garlic powder, or to taste
  • 1 cup vegetable juice
  • 2 medium Russet potatoes, chopped and par-boiled (about 5 minutes)
  • 2 cups cooked garbanzo beans
  • 10 oz frozen and thawed chopped spinach
  • 1 tsp dried basil

Directions
  1. In a large saucepan over medium heat; saute onions and green beans in 1/4 cup water until onion is translucent.
  2. Stir in curry paste.
  3. Cook, stirring, for 5 minutes.
  4. Add cumin, cayenne, salt, pepper and garlic.
  5. Stir in juice, potatoes and garbanzo beans, cook 5 minutes.
  6. Add spinach and cook until hot.
  7. Remove from heat and stir in basil.
