I found this recipe on a can of Carnation evaporated milk. It is fabulous! My neighbors can't get enough. Like a giant Twix bar...

Ingredients
  • Base:
  • 7 oz shorbread or digestive cookies, crushed
  • 1 oz butter, melted
  • Caramel filling:
  • 5 oz butter
  • 5 oz dark brown sugar
  • 14 oz can condensed milk
  • Topping:
  • 7 oz milk chocolate, melted

Directions
  1. Line with baking parchment or grease an 8 inch square brownie tin.
  2. Base:
  3. Mix crushed cookies with 1 oz melted butter.
  4. Press into tin for base. Make an even layer.
  5. Chill for 20 minutes.
  6. Caramel filling:
  7. In a non-stick pan mix the butter and brown sugar and stir over medium heat until butter melts and sugar dissolves.
  8. Add the condensed milk and stir until bubbles appear on surface. Remove from heat as soon as it comes to a boil.
  9. Spread evenly on cookie base and chill for about an hour.
  10. Topping:
  11. Melt milk chocolate and spread evenly over top of cooled caramel mixture.
  12. Let topping cool, then slice and serve.
