How to make it

  • Bring to a boil the rice, coconut milk, spring water, the ginger and salt.
  • Stir once, cover and cook over a low heat until all the liquid is absorbed and the rice is tender. (approximately 15-20 min.)
  • Then toast the dried coconut in a skillet on top of the stove over a very low heat until lightly browned.
  • Remove the chunks of the ginger. Sprinkle the toasted coconut over the rice and then add the cilantro.
  • It's easier to cook this rice in a ricer. Perfect every time.

    I've been seeing a lot of the coconut rice recipes lately - I would love to be able to make it at home. Jasmine is my favorite rice, and your recipe sounds delish...the perfect one for me to try - thanks!
