Thai Coconut

- 1 cup jasmine rice shopping list
- 1 cup unsweetened coconut milk shopping list
- 1 cup water shopping list
- 1 piece fresh ginger peeled & cut in 2 large chunks shopping list
- 3/4 tsp sea salt shopping list
- 1/3 cup unsweetened dried coconut shopping list
- 2 Tbsp. fresh chopped cilantro shopping list
How to make it
- Bring to a boil the rice, coconut milk, spring water, the ginger and salt.
- Stir once, cover and cook over a low heat until all the liquid is absorbed and the rice is tender. (approximately 15-20 min.)
- Then toast the dried coconut in a skillet on top of the stove over a very low heat until lightly browned.
- Remove the chunks of the ginger. Sprinkle the toasted coconut over the rice and then add the cilantro.
- It's easier to cook this rice in a ricer. Perfect every time.
