Thai Coconut Recipe
Delicious rice side dish. I serve this with either Tofu or Beef Terriyaki.

Ingredients
  • 1 cup Jasmine rice
  • 1 cup unsweetened coconut milk
  • 1 cup water
  • 1 piece fresh ginger peeled & cut in 2 large chunks
  • 3/4 tsp sea salt
  • 1/3 cup unsweetened dried coconut
  • 2 Tbsp. fresh chopped cilantro

Directions
  1. Bring to a boil the rice, coconut milk, spring water, the ginger and salt.
  2. Stir once, cover and cook over a low heat until all the liquid is absorbed and the rice is tender. (approximately 15-20 min.)
  3. Then toast the dried coconut in a skillet on top of the stove over a very low heat until lightly browned.
  4. Remove the chunks of the ginger. Sprinkle the toasted coconut over the rice and then add the cilantro.
  5. It's easier to cook this rice in a ricer. Perfect every time.

I have a more "deserty" recipe for this...I like the ginger & cilantro here!
