French Green Bean And Potato Salad Recipe

Ingredients
  • 1 clove garlic
  • 1 pound (450 gm) green beans
  • 1 pound (450 gm) potatoes,
  • Olive oil (1 to 2 tablespoons)
  • Sliced black olives
  • 1/4 teaspoon oregano
  • 1/4 teaspoon parsley
  • 1/4 teaspoon sweet basil
  • 1 dash red pepper
  • Salt and pepper to taste

Directions
  1. * Remove 'tails' from the green beans, cut them into 2 inch lengths, and simmer them until just soft
  2. * Peel the potatoes, cut into chunks, and boil gently until cooked but not falling to pieces
  3. * Allow the potatoes and beans to cool
  4. * Combine all ingredients in a bowl and chill for 2 hours.
  5. *Serve with BBQ or grilled food.
