If you need to make a cake ahead of time this is the one because it will stay moist for days. My husband who does not have to be wheat free loves this - hope you do too!

I tried this recipe about a year ago (I am gluten-free), and it was fabulous. I am searching for it again because I want to make it again for an office party! I made it for my father's birthday; nobody in my family could tell it was gluten-free. Super recipe and I would recommend it to anyone. The only caveat would be that it does take a fair amount of time to make. But if you love carrot cake, you'll love the results if you follow the recipe accurately! It is so moist and keeps well for many days in the refrigerator. And the cream cheese frosting is to die for. Yum!

The ingredients list calls for one 8 1/2 ounce can crushed pineapple with juice, but the cooking directions don't say whether or not you add the juice into the cake batter. I don't want to make this until I'm sure whether or not I'm supposed to add it.
To answer majekmom's question about other possible ingredients containing gluten, the answer is no, all the ingredients on this list are gluten free. Gluten comes directly from wheat. Things to look out for on ingredient lists that aren't always associated with wheat are things like Maltodextrin, Soy Sauce, Malt Vinegar, Worcestershire Sauce, and Tamari. They are all things that usually are prepared using wheat even though wheat isn't on their actual ingredients lists. All other products out there WILL show wheat on the list of ingredients. Also take into account that your previously used pots, pans, cutting boards, mixing bowls, etc... unless THUROUGHLY cleaned may have trace ammounts of gluten still on them if you used them to make meals containing gluten in the past. Cross-contamination is the #1 problem for keeping a meal 100% gluten free even when all the ingredients used to make the meal don't themselves contain gluten. So since it will be your first time baking gluten free, I highly recommend that before you start, make sure you re-clean everything that you'll be using to make the meal with.
