  • 2 teaspoons blackstrap molasses
  • 2 tablespoons fish sauce
  • 1-2 large cloves garlic, crushed
  • 1 shallot, finely chopped (substitute 1/2 small mild onion, if necessary)
  • 2 teaspoons caster or turbinado sugar
  • 1 pound boneless pork loin, chopped fine
  • 1/2 pound total rice (cellophane) noodles, cooked per package directions
  • 1-2 cups mung bean sprouts
  • A small handful of each: fresh cilantro, basil, mint, and chives
  • Torn lettuce leaves

Directions
  1. Make a sauce by heating the light molasses with two-thirds of the fish sauce in a heavy saucepan, stirring frequently.
  2. Transfer it to a bowl, cool a bit, and combine with the garlic, shallot, sugar, and the remaining fish sauce and salt.
  3. Add the minced pork, mix thoroughly, then cover and leave to stand for 3 hours
  4. Shape the minced pork into little patties, about 1 inch in diameter, place over a preheated grill and cook for 3-4 minutes on each side, until cooked through.
  5. To serve, divide the noodles between 4 warmed bowls, add the pork, torn lettuce. Top with the sauce.

This receipe looks delicous and healthy! One question, do you have a prefered fish sauce that you like to use? There are so many diffrent selections and not having used it much I am not sure which one is the best. Thanks!


What I do is go to the ONLY Asian market in my town (which is actually a combination whole foods market/Asian market), and look ignorant but enthusiastic, and ask very politely if the nice lady there could please show me the best...whatever I'm looking for. What I have on hand is Phu Quoc and it is REALLY GOOD STUFF! I use the same ploy to find really good soy sauce, too!

Hi Waterlilly, Great post, I just saw a show on the travel channel about fish sauce. (That bald guy that eats everything) I have been wanting to try cooking with it and this sounds like a perfect recipe to get my feet wet.

According to the show Phu Quoc is known for its fish sauce the world over. Thanks for a great post... Jim
