Ricotta Fritters

These are a different way to serve cheese for dessert..Got this one off the net.
Ingredients
- 8 oz. ricotta cheese shopping list
- 2 eggs shopping list
- 1/3 cup flour shopping list
- 1-1/2 tbls. butter, softened shopping list
- 1 tbls. lemon zest, grated shopping list
- Pinch of salt shopping list
- canola oil for frying shopping list
- honey to garnish shopping list
How to make it
- In large mixing bowl, mix together ricotta cheese and eggs
- Add flour and mix well
- Add butter, lemon zest, and salt
- Beat until all ingredients are well mixed
- Let batter rest for 1 hour
- In large skillet, heat oil 1/2 in. deep over medium high heat
- Drop batter, 1 tbls. at a time, without crowding
- When a light golden brown, turn over and cook other side
- Transfer to paper towel covered plate to drain
- Serve with honey drizzled over top
- Sometimes, I garnish with chopped pistachios too
