Ingredients

How to make it

  • In large mixing bowl, mix together ricotta cheese and eggs
  • Add flour and mix well
  • Add butter, lemon zest, and salt
  • Beat until all ingredients are well mixed
  • Let batter rest for 1 hour
  • In large skillet, heat oil 1/2 in. deep over medium high heat
  • Drop batter, 1 tbls. at a time, without crowding
  • When a light golden brown, turn over and cook other side
  • Transfer to paper towel covered plate to drain
  • Serve with honey drizzled over top
  • Sometimes, I garnish with chopped pistachios too

    I just made these and they were very good! They are like very light and delicate pancakes. I love the slight lemon taste and the sweetness of the honey. I added pistachios on top. This can be served for breakfast or dessert.
