Tortellini Fagioli With White Wine And Much Garlic Recipe

This is an alternative i made up one night After discovering I only had dried beans.

Ingredients
  • 15 large cloves of garlic smashed and peeled
  • Half and onion chopped
  • 1 oz of red bell pepper sliced thin
  • Three tablespoons fresh orwegano10 to 12 large fresh basil leaves.
  • 6 tablespoons of extra virgin olive oil
  • 2 tablespoons of sweet butter
  • 2 oz of pine nuts
  • 4 oz of tortellini
  • 4 oz of rigatoni
  • 6 oz of dried black-eyed peas
  • 3 tablespoons of sea salt for the water.
  • Fresh ground black pepper to taste
  • A pinch of hot pepper flakes
  • 3 tablespoons of nutritional yeast
  • *Grated Romano Cheese optional

Directions
  1. First fill a large pot with cold water and bring to a boil add the beans and the salt and boil for 30n minutes. While the pot is boiling, make the sauce.
  2. After 30 minutes has passed, add the pasta and cook until aldente.
  3. For the sauce:
  4. In a saucepan, add the oil and the butter, pine nuts the garlic and the onion.
  5. Sauté until garlic is soft about 6 minutes add the wine and some of the pasta water
  6. Using a slotted spoon remove the pasta and the beans to the sauce pan and ad more liquid it should be a little on the watery side
  7. Finish the dish by adding the thin strips of red bell peppers
  8. Enjoy
