How to make it

  • To make fi;ling: Whisk together the sugar,cornstarch,cinnamon and salt in large bowl. Add the blackberries to the bowl and very gently toss to coat with the sugar mixture. Drizzle with the lemon juice. Pour the filling into a 12x8" baking dish. Bake 25 min,or until the filling is hot and bubbling around the edges
  • To make topping:
  • Whisk together the flour,sugar,cornmeal,baking powder,baking soda and salt. With pastry blender or fork,cut in butter until it is the size of small peas. Stir in the buttermilk until no dry pockets remain.
  • Remove the cobbler from the oven and drop 6 spoonfuls of toppping on top of filling,using all the topping. Do not let topping mounds touch. Sprinkle them lightly with sugar. Bake 15-18 mins,until the filling is hot and bubbly and topping is brown. Cool on wire rack for about 20 mins. Serve warm,topped with a scoop of vanilla ice cream.
  • Bake temperature for the filling-350-375
  • Bake temperature once biscut topping is added 400-425

    Topping is not crunchy like most of the cobbler recipes in here. It is more biscuit like. I like it that way. And there are more berries to make the cobbler juicy. It's berry berry delicious!

    Had to double the time for the topping to start changing color, and then with the convectionaire oven on to circulate the heat.
    I'm thinking the oven temp needs to be at 400 to 425 degrees to properly bake the biscuit topping.

    I have bookmarked this recipe to make for my dearest mother that is beating the bushes picking fresh blackberries. But tell me, what temperature this recipe comes together at? I'm assuming it's going to be somewhere around 350 degrees. I know it's just a little detail but it should be added to your recipe.
