This reminds me of the carrot salad recipe I have posted that has shoe string potato chips in it! It really is a nice touch, but you sure have to eat it right away otherwise they get very soggy!

Very good! Tried it with ranch dressing and chicken then again with the tuna and parmesan peppercorn. Love adding shredded carrots to it, adds color and nutrition. The shoestring potatoes for a topping adds just the right extra.
