Shrimp Stuffed With Crabmeat Recipe
This Southern recipe is good for company but honestly I always made it for my family. Who says kids can't have stuffed shrimp? You can make this ahead of time and refrigerate till needed.

Ingredients
  • 18 uncooked jumbo shrimp, shelled and deveined (butterfly cut-tails on)
  • salt to taste
  • 1 (6 oz.) pkg crab meat, pick thru and flake
  • 2 hard-cooked eggs, finely chopped
  • 2 sprigs parsley, chopped
  • 1 Tbsp. finely chopped pimiento
  • 3 slices slft white bread, cubed
  • 2 dashes Worcestershire sauce
  • Dash of salt
  • 6 Tbsp. melted butter or margarine
  • 5 Tbsp. mayonnaise, divided
  • 4 tsp. milk
  • Paprika

Directions
  1. Slit each shrimp down the back, slicing deeply to make shrimp lay flat. Salt each shrimp.
  2. Combine crabmeat, eggs, parsley, pimiento, bread cubes, Worcestershire sauce, salt, butter, and 3 Tbsp. mayonnaise.
  3. Stuff each shrimp with 1 Tbsp. crabmeat mixture (use it all up); place in a buttered baking dish.
  4. Combine remaining 2 Tbsp. mayonnaise and milk, stirring well.
  5. Pour 1/2 tsp. milk mixture over each shrimp; sprinkle with paprika.
  6. Bake at 325 degrees for 20 minutes or until stuffing is golden brown and shrimp are pink.

No I'm sorry, I'm not into the whole camera thing YET!!! The shrimp are sliced open and do lay flat but the tails STAY ATTACHED (butterfly cut). I love this dish on New Years Day. YUMMY!
