Vermont Baked Beans

- 1lb. dried navy beans(about 2c.) shopping list
- cooking spray shopping list
- 11/2c chopped yellow onion shopping list
- 1/2c diced salt pork(about 4oz.) shopping list
- 51/2c water shopping list
- 1/2 to 3/4c maple syrup,divided(I use 1/2 c) shopping list
- 11/2Tbs Dijon mustard shopping list
- 1tsp. salt shopping list
- 1/4tsp hot pepper sauce(such as tabasco) shopping list
How to make it
- Sort and wash beans;place in a large bowl. Cover with water to 2" above the beans;cover and let stand 8 hours or overnight. Drain beans.
- Preheat oven to 325.
- Heat dutch oven over med-high heat. Coat pan with cooking spray. Add onion and pork to the pan;saute 5 mins.. Add beans,51/2c water,1/2c syrup,mustard,salt and pepper sauce;bring to a boil. Cover and bake at 325 for 21/2 hours or till beans are tender,stirring occasionally. Uncover and bake an additional 30 mins or till mixture begins to thicken. Stir in remaining 1/4c syrup. Yield:12 serv.(serv. size;1/2c)
