Vermont Baked Beans Recipe
Great baked beans with a taste of maple syrup.

Ingredients
  • 1lb. dried navy beans(about 2c.)
  • cooking spray
  • 11/2c chopped yellow onion
  • 1/2c diced salt pork(about 4oz.)
  • 51/2c water
  • 3/4c maple syrup,divided
  • 11/2Tbs dijon mustard
  • 1tsp. salt
  • 1/4tsp hot pepper sauce(such as tabasco)

Directions
  1. Sort and wash beans;place in a large bowl. Cover with water to 2" above the beans;cover and let stand 8 hours or overnight. Drain beans.
  2. Preheat oven to 325.
  3. Heat dutch oven over med-high heat. Coat pan with cooking spray. Add onion and pork to the pan;saute 5 mins.. Add beans,51/2c water,1/2c syrup,mustard,salt and pepper sauce;bring to a boil. Cover and bake at 325 for 21/2 hours or till beans are tender,stirring occasionally. Uncover and bake an additional 30 mins or till mixture begins to thicken. Stir in remaining 1/4c syrup. Yield:12 serv.(serv. size;1/2c)

I saw Kimmer's raves about this one and I will get the dry beans and make it for a potluck dinner Friday. I have the Vermont syrup shipped to me once a year in their beautiful big tin, so i am ready to cook 'em. Thanks for a great post.^5
