Southwestern Warm Potato Salad

- 8 potatoes shopping list
- 2 garlic cloves shopping list
- 1 cup minced parsley shopping list
- 1/2 cup oil shopping list
- 3 tablespoon vinegar shopping list
- 1/2 teaspoon Tabasco sauce shopping list
- 1/8 teaspoon ground nutmeg shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Quarter potatoes and boil until tender.
- Meanwhile peel and mince garlic and place in a small jar.
- Wash and dry the parsley then cut stems off and mince.
- Place in jar with the garlic then add oil, vinegar, Tabasco, nutmeg, salt and pepper.
- Screw lid on the jar and shake vigorously to dissolve the salt.
- Drain potatoes and when cool enough to handle slice them thinly onto a serving platter.
- Drizzle with dressing and serve hot, warm or cold.
