My Version Beetroot salad

- 2-3 firm beetroots (beets) shopping list
- 3 cloves of garlic shopping list
- 1/2 cup regular vinegar shopping list
- 1 tbs sugar shopping list
- 1 thinly sliced onion, (optional) shopping list
How to make it
- Place Beetroots in pot and cover with water
- Place lid on pot and bring to a boil
- Set flame to "low" and cook for about 40 minutes
- You know it's ready when you prod it with a fork and the fork goes in easily and the peel comes off by hand
- Pour off water and let the beetroot cool down enough to handle
- Peel the Beetroots. (You can use a knife but it is easiest by hand)
- Grate them into a bowl
- Add three crushed cloves of Garlic (not essential but it adds a lot)
- Add 1 tablespoon of Sugar and about 1/2 a cup of Vinegar. (estimate)
- Mix all ingredients together
- Refrigerate for at least an hour. Even better the next day
- SERVING SUGGESTION: Add 1 thinly sliced Onion (Onion Rings)
