Lemon Raspberry Yogurt Muffins Recipe

this is a good recipe to have on a Sunday or if your having a brunch... the recipe is from a Gooseberry Patch cookbook.

Ingredients
- 2 eggs ..beaten
- 1/2 cup milk
- 1/2 cup lemon yogurt
- 4 TBSP. butter....melted
- 1 teasp. vanilla
- 2 cups flour
- 1 TBSP. baking powder
- 1 teasp. salt.... ( or a little less)
- 1 teasp. lemon peel.... finely grated
- 2/3 cup sugar
- 2 cups raspberries
- ............................................................................
- Lemon Glaze
- ............................................................................
- 2 TBSP. lemon juice
- 1/2 cup powdered sugar
- 1 teasp. lemon peel..... finely grated
Directions
- combine eggs, milk, yogurt, butter, and vanilla
- in medium bowl: stir together the flour, baking powder, salt, lemon peel and sugar
- mix the yogur mixture into the flour mixture.. don't over mix
- in 2 - 3 strokes, fold in raspberries
- spoon into a greased muffin cups
- bake at 350' F for 18 - 20 minutes or until tops spring back when touched
- serve plain or brush warm muffins with a Lemon glaze

- combine the juice, sugar and lemon peel
- mix until smooth
- brush over the warm muffins
