Pineapple Or Banana Fritters Recipe

Ingredients

1 cup flour

2 eggs, separate the whites from the yolks and beat in separate bowls

1 Tbsp. butter, melted or at room temperature

1 tsp. vanilla extract

1 cup milk or 1/2 cup milk and 1/2 cup water

3 bananas or 4 - 5 rings of fresh pineapple cut into chunks and drained well on paper towel or batter will not stick.

squeeze of fresh lemon juice

confectioners' sugar

cinnamon

Directions

Beat the egg yolks and egg whites in separate bowls.

When I beat the egg whites I like them to come to stiff peaks.

Add the egg yolks, butter, vanilla and milk to the flour.

Then fold in the egg whites last.

*I like to add a squeeze of lemon juice to this mixture.

Slice the bananas or pineapple into chunks and drop into batter.

Fry each banana or pineapple chunk in hot shortening / lard.

Turn the fritters so that they brown evenly.

Remove when nicely browned, place on a plate lined with paper towels and sprinkle with confectioner's sugar mixed with a couple of teaspoons of cinnamon.

Note: You can use canned pineapple chunks but make sure they are drained and dry before placing them in the batter.

I have never attempted to make fritters at home, but your recipe has inspired me to do just that. I love bananas, so that's what I will try first - I'm sure many different fruits could work in these. They don't sound that difficult, just some time and patience (and then the willpower not to eat them all!)...thanks, laadeedaa~
