THIS IS A NICE STIR FRY ..FULL OF VEGGIES AND FLAVOR

Ingredients
  • 2- 3 - slices of fresh ginger .....chopped
  • 1 - teaspoon sugar
  • 1 - tablespoon cornstarch
  • 2- tablespoons soy sauce
  • 1/4- teaspoon salt
  • 1/2 - cup chicken stock
  • 3 - carrots . thinly sliced on the diagonal
  • 1 - green bell pepper.....thinly sliced
  • 1- red bell pepper thinly sliced
  • 1 - jar of minature corn on the cob, whole or cut halved lengthwise
  • 1 - ( 8 ounce) can sliced water chestnuts, .......drained..
  • 1/2 - cup .... radishes, thinly sliced
  • 1- cup snow peas
  • 1 - cup bean sprouts
  • 5-6 - mushrooms , thinly sliced
  • 4 -tablespoons peanut oil
  • 2- cloves garlic
  • 3 - tablespoons sherry ...... (or white cooking wine )
  • note from Tink..............for a little heat i add the oriental garlic chili paste ...i put 1 tsp or more .but do it to you taste buds or leave it out .........
  • sesame seeds............

Directions
  1. Mix ginger, sugar, cornstarch, soy sauce, salt and chicken stock; set aside.
  2. prepare each vegetable and set aside.
  3. add oil to a wok or large skillet and heat until a piece of ginger sizzles but does not burn.
  4. add garlic to the oil; stir for 30 to 40 second to flavor the oil, then remove the cloves.
  5. add carrots, peppers, and corn; stir fry 1 - 2 minutes.
  6. add water chestnuts and radishes; stirfry for 1 to 2 minutes.
  7. add snow peas, and bean sprouts, and mushrooms, stir fry for 30 seconds to 1 minute.
  8. if the vegetables are cooking too quickly, lower the heat...
  9. add sherry... and the cornstarch mixture;
  10. stir until mixture thickens
  11. transfer vegetables to a serving platter sprinkle with sesame seed and serve with white steamed rice ........enjoy
  12. serves 8 to 10........depending on serving size........

Mini corn for mini. Thank you Mini for this flavorful vegetable recipe I will use a Dikon radish I have on hand. No chicken broth for me in case you are inviting me over, use veggie broth.
