Ingredients

1/4c rice vinegar

11/2 tsp dijon mustard

2Tbs. honey

1/4tsp salt,plus more for seasoning

fresh ground black pepper

3/4c walnut oil

1(10oz) pkg. mixed salad greens

1 mango,seeded,peeled,diced

1c goat cheese(Chevre)crumbled

1/2c dried cranberries

mint sprigs,garnish

Directions

In a blender,combine vinegar,mustard,honey,1/4tsp salt,and some fresh ground black pepper. Cover and blend 30 seconds. With the blender running,slowly,add oil in a thin steady stream(if necessary,stop blender and scrape downsides). In a salad bowl,combine greens,mango,goat cheese and cranberries. Add mint sprigs to liking and drizzle with dressing. Toss gently to coat. Season,to taste with salt and pepper.
