Chianti-braised Chicken Thighs

- 4 ounces sweet Italian turkey sausage link (or hot - doesn't have to be turkey, can be regular) shopping list
- 1/2 cup fresh bread crumbs shopping list
- 1/2 cup parmesan cheese, freshly grated shopping list
- 1 large shallot, minced shopping list
- 1 large egg shopping list
- 2 tablespoons fresh parsley, chopped shopping list
- 2 teaspoons fresh thyme, chopped shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon ground black pepper shopping list
- 8 large chicken thighs without skin, boneless shopping list
- 2 tablespoons olive oil shopping list
- 1/4 cup bacon, chopped shopping list
- 3/4 cup onion, finely chopped shopping list
- 6 garlic cloves, minced shopping list
- 750 milliliters Chianti (1 bottle) shopping list
- 3 cups chicken broth, canned, low-salt shopping list
- 2 cups crushed Italian tomatoes, in puree shopping list
- 1 bay leaf shopping list
- 1 teaspoon dried basil shopping list
- 1 pound egg noodles, cooked and drained shopping list
How to make it
- Mix first 9 ingredients in medium bowl. Place each thigh on work surface and fill with 2 T. stuffing. Wrap chicken thigh around filling and tie with kitchen string to hold together. Sprinkle generously with salt and pepper.
- Heat olive oil in heavy large skillet over medium-high heat. Add bacon; saute until light brown and fat is rendered. Remove to paper towels to drain. Add chicken to dripping and cook until golden on all sides. Transfer to plate. Add onion and garlic to skillet; saute until tender. Return bacon to skillet, add wine and boil until mixture is reduced to 2 cups. Add broth, tomatoes, bay leaf, basil and chicken thighs. Bring to boil. Reduce heat and simmer uncovered until chicken is cooked through and sauce is thickened, turning chicken occasionally. (Can be made 1 day ahead. Transfer to ovenproof covered casserole and heat through at 350. Serve over noodles.

- NOTE: To make this gluten-free, substitute gf breadcrumbs and use those wonderful Glutino tagliatelle noodles! YUM.

yes.. the robot says i'll love this recipe. it happens to be italian, which is hands down my favorite cuisine, and it's chicken thys! and braised with wine, it just doesn't get any better. it seems a bit fussy, but you gotta work for the best things....more
