Ingredients

How to make it

  • Mix first 9 ingredients in medium bowl. Place each thigh on work surface and fill with 2 T. stuffing. Wrap chicken thigh around filling and tie with kitchen string to hold together. Sprinkle generously with salt and pepper.
  • Heat olive oil in heavy large skillet over medium-high heat. Add bacon; saute until light brown and fat is rendered. Remove to paper towels to drain. Add chicken to dripping and cook until golden on all sides. Transfer to plate. Add onion and garlic to skillet; saute until tender. Return bacon to skillet, add wine and boil until mixture is reduced to 2 cups. Add broth, tomatoes, bay leaf, basil and chicken thighs. Bring to boil. Reduce heat and simmer uncovered until chicken is cooked through and sauce is thickened, turning chicken occasionally. (Can be made 1 day ahead. Transfer to ovenproof covered casserole and heat through at 350. Serve over noodles.

yes.. the robot says i'll love this recipe. it happens to be italian, which is hands down my favorite cuisine, and it's chicken thys! and braised with wine, it just doesn't get any better. it seems a bit fussy, but you gotta work for the best things. a high 5 and i'm going to make this one one sunday afternoon.
