Estragons Moorish Lamb Marinade Recipe

Ingredients
  • 1 white onion,diced
  • 4 cloves garlic,smashed
  • 2Tbs ground cumin
  • 2Tbs smoked paprika
  • 2Tbs spicy paprika
  • 1/4c fresh picked oregano
  • 5 sprigs thyme
  • 1 bayleaf
  • 1/4c champagne vinegar
  • 2c white wine
  • 2tsp kosher salt
  • 2tsp ground black pepper

Directions
  1. Add all ingredients to a small pot. Bring to a simmer for 2-3 mins.. Let mixture cool to room temperature. Use as a marinade for grilled lamb skewers,chilling meat with mixture for 1 hour before cooking. Makes about 2 cups of marinade or enough for 2 lbs. of meat.
