An "end of season" kabob recipe. Use your favorite autumn vegetables and serve over rice, if desired.

Ingredients
  • 2lbs smoked sausages, cut in 1 inch pieces
  • 24oz beer or apple juice
  • 2 bell peppers, cut into 1 inch pieces
  • 2 apples, wedged
  • 2 onions, wedged
  • 1 zucchini or squash, peeled and cut into 1 inch cubes
  • 8oz fresh mushrooms
  • 1/4 cup honey
  • 1/4 cup tomato sauce
  • 2t Worcestershire sauce
  • 1T chili pepper
  • juice from half a lemon or 1 lime
  • salt and pepper

Directions
  1. In saucepan, heat beer or apple juice, honey, tomato sauce, Worcestershire sauce, chili pepper, citrus juice and salt and pepper until combined. Let cool while preparing vegetables and fruit.
  2. Place sausage and all vegetables(not apples) in large bowl with lid or zipper top bag and pour in marinade. Let set about 1 hour.
  3. Thread prepared skewers with alternating pieces(don't forget the apples, now) and grill at a medium heat for about 15 minutes brushing with marinade and turning once.

Where do you come up with these? Could I use andouille for this? Sounds sooo good!


You know enough about me, dd, to know this is my element...ideas I've seen elsewhere and just tweak 'em a bit to suit my tastes or as ideas for others. As for andouille, sure...any precooked sausage will work, just don't use it raw, it'd take much longer to cook than stated here, and you wouldn't wanna marinate any raw meat.
