Autumn Sausage Kabobs

    My first time skewering up sausages so this was a fun recipe!! I used chipotle cherry pork sausages, and threw in some yellow squash in there since I had it :) Also cooked the shrooms' on a different skewer since my family absolutely despises them, more for me! The marinade was very flavorful, next time I will use a dark beer though, the only beer I had on hand was Shock Top Belgian White. Also wasn't sure if the 1Tbs. of chili pepper was fresh or dried. I'm guessing dried so I happened to have chipotle chili flakes that I used with a dash of habanero flakes, made it quite spicy :)

    These look very yummy Michelle! Nice picture! I'm not a zucchini fan so would leave that off but the peppers and mushrooms would be good. I like the combo of apples and sausage but not so sure if I'd like the apples with the other veggies. Nice job! I think I'm going to try a variation on this soon!

    That's what I was planning on using Points, Granny Smith. Lol at your aversion to zucchini Janet. I think leaving them off is just fine, just add extra peppers and onions :) I wish I had remembered the apples darnit :(

    Onions and peppers were not quite done enough for me. Mother couldn't be bothered to talk while she was destroying the plate.
    Was cautious about the heat, this being a Keni recipe. I used 1tsp chili powder and 1tsp ancho powder. Hindsight, I could have bumped it up some more.
    Used zucchini and apple juice.
    Used both granny smith and red apples, don't know the variety. Granny smith were more done than the red apples. I would have thought the other way around.
    Did these inside under the broiler at 400F. That is the lowest setting allowed. Rack was in the middle of the oven.
    Used a home made tomato sauce from the last tomatoes of the year from my vines.

    Points, some of my zukes and squash were a tad under done but most of them were good. Great it worked out well with the apple juice and I, am too, surprised that your granny smiths were cooked faster than the red. Glad you and Mother enjoyed these :)

    There is a Whole Foods about 60 miles from me. I haven't been there but those sausages sound like they would be worth the trip.

    Left the rest of the unused cubed ingredients in the marinade and added the used kabobs in there too plus the rice.
    Been eating out of it for another couple of days and adding some veggie puree and some sweet potato gratin.
    Makes for a filling meal using about 2 cups total.

    Our Whole Foods is 35-40 miles away. It's a little bit of a drive (around 30 min. drive with no traffic) but well worth it especially since they always have a lot of different variety meat on sale and I just buy a ton of it. They put stuff on ice for you too, so no need to bring an ice chest. We make the trip about every 3 months or so :) Another plus for the drive is that there is a Trader Joe's like 2 mins. away from it!
