Zesty Fig Pie

- 3 cups all purpose flour shopping list
- 1 cup granulated sugar shopping list
- 1/4 cup cornstarch shopping list
- 1-1/2 cups butter cut into 1" pieces shopping list
- Filling: shopping list
- 2 eggs shopping list
- 1 cup brown sugar firmly packed shopping list
- 1/2 cup orange juice shopping list
- 3 tablespoons lemon juice shopping list
- 1 teaspoon grated lemon peel shopping list
- 1 teaspoon vanilla shopping list
- 2 cups california dried figs stems removed shopping list
- 1 cup pitted dates shopping list
- 1 cup walnuts shopping list
How to make it
- In food processor or mixer bowl combine flour sugar and cornstarch for pastry.
- Add butter and process until dough holds together then divide into thirds.
- Roll out two thirds of dough on a baking sheet to reach all corners evenly.
- Prick with fork then bake at 350 for 15 minutes.
- Roll out remaining dough between plastic wrap to rectangle about half the size of baking sheet. Cut into long strips about 1/4" wide.
- Combine eggs, brown sugar, juices, lemon peel and vanilla for filling in food processor.
- Blend well then add figs, dates and nuts and process until evenly minced.
- Spread filling over baked pastry and top with strips of dough criss-crossing diagonally.
- Return to oven and bake 30 minutes then cool and cut into small bars.
