Sausage with Beans and Escarole

- 12.oz chicken sausage with Mediterranean spices,cut in 1/4" rounds shopping list
- 1 15oz. can cannellini beans,drainesd and rinsed shopping list
- 1 15oz. can garbanzo beans,drained and rinsed shopping list
- 1 28oz. can tomatoes,drained and chopped. shopping list
- 11/2c canned chicken broth shopping list
- 1 bay leaf shopping list
- 1 tsp.dried thyme shopping list
- 1/4tsp crushed red pepper shopping list
- 1 small head escarole,chopped shopping list
- 1/4c coarse ground parmesan cheese shopping list
- 2Tbs chopped fresh parsley shopping list
- salt and pepper shopping list
How to make it
- Combine sausage,beans,tomatoes,broth,bayleaf,thyme and red pepper in slow cooker and cook on low for 4 hours
- Stir in escarole and cook an additional 5-8 mins,until just wilted. Stir in the parmesan and parsley. Season with salt and pepper.
