Sausage With Beans And Escarole Recipe

Ingredients

12.oz chicken sausage with Mediterranean spices,cut in 1/4" rounds

1 15oz. can cannellini beans,drainesd and rinsed

1 15oz. can garbanzo beans,drained and rinsed

1 28oz. can tomatoes,drained and chopped.

11/2c canned chicken broth

1 bay leaf

1 tsp.dried thyme

1/4tsp crushed red pepper

1 small head escarole,chopped

1/4c coarse ground parmesan cheese

2Tbs chopped fresh parsley

salt and pepper

Directions

Combine sausage,beans,tomatoes,broth,bayleaf,thyme and red pepper in slow cooker and cook on low for 4 hours

Stir in escarole and cook an additional 5-8 mins,until just wilted. Stir in the parmesan and parsley. Season with salt and pepper.

This sounds fabulous! I hope you don't mind that I'll probably wait for cool weather to try it, though -- I'm just chillin' with the grillin' way tooo much right now! I buy a terrific (and low fat) chicken and spinach sausage at my local Sam's that I think will be excellent in this dish!
