This is one of my signature dishes that is always requested. It is simple yet very impressive. A big family and friend favorite! This dish can be served over salad as a main dish or over a bed of assorted lettuce as an appetizer.

Thanks. I made this at school a few months ago for a teacher who had surgery. I made it during my lunch and was going to take it to her after work. When the day was almost over, a substitute janitor came running down the hall yelling" I have to have that recipe, that is the best thing I have ever tasted!"
I was in shock, several people saw the bowl in the refrigerator in the lounge and ate it! The principal had to put a bulletin out saying" I know we love Ms. Major's cooking, BUT do not eat something that isn't yours!" After I calmed down, It was funny! Everyone teases me that I shouldn't be such a good cook! This dish is that popular at my school!

Oh my goodness! That sounds so good. There's nothing worse than sharing a refrigerator and somebody eating YOUR food!! Brings back memories of a bad room-mate.

Hello....
LOVE...LOVE....LOVE...this recipe
for the chicken salad! I hope everyone realizes
that for this recipe to live up to it's name,
'Fried Chicken' salad...you just have
to use Fried Chicken... not just any old
chicken you happen to have laying about!!!I just had to say that!!!
....mjcmcook...."5" FORKS....

Yes, thank you. You need Fried chicken for this recipe! Either homemade, popeyes, Kentucky or Deli store bought will do. The crust gives this dish a lot of flavor! There are many chicken salads but this is the Crunchy kind!

It;s printed off, d, so I can give it a trial run next weekend - it does sound wicked, wicked good! I will let you know how I do - I was going to do my usual Chicken Macaroni Ring Pasta salad, but I may have to go for something new...shake it up a bit! The family needs to taste something different, I think, and I KNOW everyone would like this (unless they've lost their taste buds!)...thanks again, D!
