Baked Potato Salad Recipe

How to make it

  • Boil potatoes until tender.
  • Place potatoes, celery, onion, and green onions in large bowl.
  • Stir in sour cream, mayonnaise, and cheese.
  • Season with salt and pepper.
  • Sprinkle with crumbled bacon and sprinkle with a little creole spice.

    Sounds delicious! I cook for my church frequently and next month (for the single's home team leaders), I am going to make Rosemary Ranch Chicken Kabobs and a potato salad. I think you have a winner here! (I'll be making all of it as is with a couple of exceptions - I have started using yogurt cheese instead of sour cream or mayo. I just thin as necessary and I'll add the bacon last as there is a vegetarian in the bunch and I'll take her portion out first). Thanks for the recipe!

    This sounds yummy. I bet my hubby would like this and he doesn't like potato salad. This sounds better than most recipes I've come across.

    yum! I make one like this, but I used straight up baked potatoes - just bake a whole 5lb bag worth at once, what is not eaten that night gets put in fridge and turned into salad or homefries or... oh yum!

    I make several versions of the classic potato salad. My original potato salad is the basic but instead of sweet pickle, I use green olives. I love the salty taste that green olives and their juice bring to the salad. I also add lots of celery, boiled eggs and red onions. I also make a curried version with celery, onion, curry leaves(when I can find them) and a little mayo. All are good like you say. I love any version of potato salad!
