Pineapple Casserole Recipe

Ingredients

¼ lb butter (let it soften)

¾ cup granulated sugar

4 unbeated eggs

1 medium can crushed pineapple (drained)

5 slices bread (I use white) cut into 1 inch cubes

Directions

Cream butter with the sugar

Add 4 unbeaten eggs one at a time

Fold in the pineapple then the bread

Pour into greased casserole dish (put something under it to catch any juices that might overflow and get your oven yucky)

Bake for 45 minutes at 350 degrees

We never have any leftovers whenever we make this for guests. Just don't count the calories and fat in it! At some point, I'll need to tinker to see if I can come up with a healthier version w/o sacrificing too much of the taste.

Yes you can substitute eggbeaters. Hopefully I'll find a way to substitute the butter and sugar (at least part) and still have good flavor.

You should try using Splenda (for the sugar), it has a great taste and they make a version just for baking, the only down side is you only use 1/2 of what the recipe calls for so I wonder sometimes when I use it about the volume change, but so far everything has turned out fantastic, maybe a little shy on greatness as far as cookies are concerned. I have a similar recipe to this pineapple one that I just posted yesterday, handed down from my mom, sorry, I will try to check before posting from now on!!!
