Ingredients

How to make it

  • Cream butter with the sugar
  • Add 4 unbeaten eggs one at a time
  • Fold in the pineapple then the bread
  • Pour into greased casserole dish (put something under it to catch any juices that might overflow and get your oven yucky)
  • Bake for 45 minutes at 350 degrees

Last night I tried this dish....Simple yet so SO delicious! I'll be making this one often from now on since I always have these ingredients in our pantry. Thanks for sharing!

[I did not have white bread so I tried wheat bread instead]

You should try using Splenda (for the sugar), it has a great taste and they make a version just for baking, the only down side is you only use 1/2 of what the recipe calls for so I wonder sometimes when I use it about the volume change, but so far everything has turned out fantastic, maybe a little shy on greatness as far as cookies are concerned. I have a similar recipe to this pineapple one that I just posted yesterday, handed down from my mom, sorry, I will try to check before posting from now on!!!

Yes you can substitute eggbeaters. Hopefully I'll find a way to substitute the butter and sugar (at least part) and still have good flavor.

Maybe you can use something like Eggbeaters which would really cut back on the fat. I'm gonna have to try this recipe--I love pineapple.

We never have any leftovers whenever we make this for guests. Just don't count the calories and fat in it! At some point, I'll need to tinker to see if I can come up with a healthier version w/o sacrificing too much of the taste.
