Ingredients
  • Use Your favorite pie crust recipe. I have one posted and I hear Jett has a great one too!
  • 2 1/2 cups fresh or frozen blueberries
  • 1 cup sugar
  • 1/2 cup flour
  • Coursley grated zest of 1/2 lemon(don't skip this part)
  • Squirt of fresh lemon juice
  • 1/4 cup dry bread crumbs, I used Graham cracker crumbs instead
  • 1 large egg, beaten with 1 tsp water, for egg wash

Directions
  1. Prepare your pie crust for a double crust pie
  2. Put the berries in a large bowl and gently stir in the sugar, flour, salt, zest and juice, let sit for 5 minutes.
  3. Srinkle bread crumbs or graham cracker crumbs over the bottom uncooked crust.
  4. Put filling in pie crust and top with crust.
  5. Cut 4 slits in the top crust and cut a circle out of the center.
  6. Cover top crust with egg wash, then sprinkle the crust with sugar, I used large sugar crystals.
  7. Bake the pie for 30 min. at 425*.
  8. Reduce the heat to 375* and continue baking for 30 more minutes. Watch the crust if it gets to brown make a loose foil tent for the pie.
  9. Transfer the pie to a rack and let it cool-and settle for at lest 30 minutes.
  10. Serve with a scoop of vanilla icecream.

Oh Michelle, I can tell this one is a winner - love the lemon juice and zest, and your switch to graham crumbs...this will be my next fruit pie, hopefully next weekend (I already have some of Jett's dough in the freezer and that takes me the longest of anything when I make pie, so this will be a breeze!)...I can't wait to get my copy of her cookbook next week!!! AND EMAIL KRIS to fix your uploading problem...

Oh yeah, Michelle - we picked up blueberries (and they are SWEET) at Costco today...I promised John your blueberry pie tomorrow. I can't wait - will take some pics for you, too, since you're having problems with yours!!! Woo-hoo!


PIE is in the oven, Michelle - I didn't know where to add the crumbs, so I omitted that. You can just let me know for next time - I'm sure the pie is going to be exceptional with or without them!!! It is beginning to smell up the kitchen - I will never want to go to bed tonight! Results later...Krum


Oh heaven help me!!!! We just ate a piece of this pie while it was still slightly warm from the oven (with a scoop of vanilla ice cream, of course)...Michelle, my husband thanks you (as do I)! What a fantastic, delicious, superior blueberry pie!!! The lemon flavor is just right, and the filling is thick and stable, not running all over my plate like so many other pie recipes. This is just phenomenal, people...TRY IT - YOU'LL LOVE IT! You cannot go wrong with this one - just perfect (even with the missing graham crumbs!)...thank you, michelle, for adding to my burgeoning "homemade pie" file - I think I have a new addiction...I'm still licking my lips and trying to restrain myself from walking back out to the kitchen for another piece (John's already marked a piece for breakfast!). I posted a pic, but you can see my "crust" skills are not the best yet!


Thanks for the "crumb" update, mich - that crust of Jett's is so nice, it doesn't seem to let the juices sog it up...the crust was just as crisp this morning, despite the hugh rise in humidity overnight, too. You gotta try that recipe of hers - it's a true pie crust extraordinaire! But I will definitely try the crumbs idea, especially when I make pumpkin next - that crust always seems to get so soggy within a day at most. I will be sure to let you know as soon as I get Dorie's cookbook - I'm gonna be in heaven!!
PS - nice "empty plate" picture you posted today - that's the way our plates looked after we ate the pie, too, because we LICKED it clean!


Michelle, I am so glad to know this recipe is stellar. I actually have a pre-printing copy of the book sent to a newspaper for review and have played with a number of recipes. I'll have to try this one, too, because you and Krumkake loved it so well.


Wow! How did I miss this one?!! Looks fabulous and thank you for mentioning my pie crust. Makes me feel so good...but what would make me feel better is if I had a big slice of this pie right now! After walking for 1 hour that's all I need is a big piece of pie.....hehe
