Hash Brown Casserole Recipe
Think outside the box. I think this could be used for more than breakfast. Great for a crowd. HMMMM so tasty, so easy.

Ingredients
  • 1 (32 oz) pkg frozen hash browns
  • 3/4 cup butter (melted)
  • 1/2 cup chopped onion
  • 1 (10 3/4 oz) can cream of chicken soup
  • 1 (8 oz) sour cream
  • 1 cup shredded cheddar cheese
  • 2 cups corn flakes, crushed

Directions
  1. Combine potatoes, 1/2 cup of the butter, onion , soup, sour cream and cheese. Stir well.
  2. Place in 2 1/2 qt. greased casserole.
  3. Stir the remaining butter into the crushed cereal.
  4. Sprinkle on potatoes and bake in 350 degree oven for 50 minutes.

This is about the same as mine except I add cubed ham and a veg like corn or peas in it for the kids. We love this recipe. The cornflake topping is the clincher on this.


My mom used to make this sometimes...and we all devoured it, great post


I have this recipe, my family loves it. I've changed the cream of chicken soup to cheddar soup and the cornflakes to potato chips, and deleted the other 1/4 cup of butter.


The recipe sounds great and so do all the alteratins, I get the feeling this recipe is well traveled.


It's real close to the one I got from cdkitchen.com "Cracker Barrel Old Country Store Hash Brown Casserole". Yummy. Half the time I forget the onions & everyone still loves it.
