Cucumber Cilantro And Tomato Raita

- 2 cups lowfat or natural yogurt shopping list
- 1 cucumber, seeded and shredded – Dutch/English cucumbers are my favorite for this shopping list
- 1 small tomato, finely chopped shopping list
- About ½ cup cilantro, finely chopped shopping list
- ½ red pepper, diced shopping list
- ¼ cup mint leaves, finely chopped (optional) shopping list
- 1 - 2 cloves garlic, crushed shopping list
- 1 tsp cumin seed, toasted, not ground shopping list
- sea salt and freshly ground black pepper shopping list
How to make it
- Combine all ingredients, and chill until ready to serve
- To save time, I roughly chop everything, then process all together in a food processor until fairly smooth, about 30 seconds.
