  • Bars:
  • ½ cup butter
  • 1 cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 cup mashed bananas (2 large or 3 medium bananas)
  • ½ cup full-fat sour cream
  • 1 teaspoon baking soda
  • 2 cups flour
  • ½ teaspoon salt
  • 1 teaspoon cinnamon, optional
  • Cream Cheese Frosting:
  • 6 ounces cream cheese
  • 4 tablespoons butter, softened
  • 2 tablespoons milk or cream
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions
  1. For the bars, cream together butter and both sugars.
  2. Add eggs, mixing in well; stir in bananas.
  3. Dissolve soda in sour cream.
  4. Add flour, salt and cinnamon to batter alternately with sour cream mixture, until batter is well blended.
  5. Pour batter into greased 10x15 baking sheet.
  6. Bake at 350 degrees for 20 to 25 minutes.
  7. Cool completely before frosting.
  8. For frosting, mix all ingredients together with electric mixer (using a mixer will tend to give you a fluffier frosting than mixing by hand).
  9. Spread over cooled bars.

I totally agree with "notyourmomma". I buy cream cheese in 3LB. bulk packages from Sams Club every other week! Here's a 5 for a wonderful alternative to useing up those over ripe bananas!

My grandson, now 2, LOVES bananas! I'll have to make these for him...as well as those yummy frosted banana cookies I commented (twice...LOL!) about.
