Ingredients
  • 4 center cut pork chops
  • 1 box stove top or other quick cornbread dressing, cooked according to package directions.
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 cup sliced mushrooms
  • 1 cup sliced celery
  • 1 stick butter
  • 1/2 cup chicken broth
  • salt and pepper to taste
  • olive oil

Directions
  1. Season pork chops with salt and pepper.
  2. Make cornbread dressing according to package directions and set aside.
  3. Heat a little olive oil in skillet.
  4. Add pork chops and cook 3 to 4 minutes on each side or until pork chops are brown.
  5. Remove from pan.
  6. Add butter, onions, celery, bell pepper, and mushrooms and cook until tender(about 3 to 4 minutes)
  7. Return pork chops to skillet(placing on top of onion mixture).
  8. Divide cornbread dressing into fourths.
  9. Gently mold dressing on top of each pork chop.
  10. Pour broth over pork chops.
  11. Cover and cook for 20 minutes on Med. Low
  12. Place each serving on a plate.
  13. Top each pork chop with onions mixture and serve.
