Spicy Herbed Cauliflower Cheese

- 1 medium head cauliflower, chopped shopping list
- 1/4 cup skim milk powder shopping list
- 3 tbsp flour shopping list
- 1/4 tsp salt shopping list
- 1/2 tsp garlic powder shopping list
- 1/2 tsp oregano shopping list
- 1/4 tsp basil shopping list
- 1/4 tsp cayenne pepper shopping list
- 1/8 tsp coarse ground black pepper shopping list
- 1 1/2 cups skim milk shopping list
- 1/3 cup shredded low-fat old Cheddar shopping list
- 1 tbsp Dijon mustard shopping list
How to make it
- Steam the cauliflower until just tender, 3 - 4 minutes. Transfer to a medium bowl and keep warm.
- In a medium saucepan, whisk together the dry milk powder, flour, salt, herbs and spices.
- Place pan over medium heat, and slowly whisk in the skim milk until no lumps remain.
- Cook, whisking, over medium heat for 5 minutes.
- Stir in the cheese and cook until melted.
- Whisk in the mustard.
- Pour sauce over the cooked cauliflower in the serving dish and toss to combine well.
- Serve immediately.
