Potato Marraine Recipe
A simple Cajun side dish, this was often served with fish.

Ingredients
  • 4 medium potatoes, peeled
  • 1 teaspoon salt, divided
  • 1/4 cup butter or margarine, softened
  • 1 cup hot milk (not scalded, heat just until hot)
  • 1/4 teaspoon pepper
  • 1 egg, beaten
  • Parsley

Directions
  1. Place potatoes in saucepan, add 1/2 teaspoon salt and enough water to cover. Set aside for 1 hour.
  2. Cook potatoes over medium heat for about 30 minutes or until tender.
  3. Remove from pan, mash and beat well until smooth.
  4. Combine butter, milk, remaining salt and pepper, add to potatoes, stirring well.
  5. While mixture is warm, shape into 24 oval puffs, using about 1/4 cup of mixture for each puff.
  6. Place on greased cookie sheet and brush each puff with egg.
  7. Bake 425 degrees for 15 minutes or until lightly browned. Garnish with parsley.
