How to make it

  • ---Pudding---
  • Preheat oven to 350F, and place a shallow baking pan of water on the bottom rack.
  • Grease a loaf pan and set aside.
  • In a medium bowl, whisk together flours, baking powder and cranberries.
  • In another bowl blend together molasses, baking soda and water (mixture will foam substantially).
  • Pour molasses mixture into the cranberry mix and beat quickly to blend well.
  • Pour into the loaf pan.
  • Bake 55 minutes.
  • ---Sauce---
  • In a small saucepan, melt butter.
  • Stir in sugar and milk, bring to a slow boil.
  • Cook 5 minutes, remove from heat and stir in vanilla.
  • Serve warm over hot pudding.

    This sounds really good! I love all of the molasses in the cake. I'm going to try it and see what works to make the sauce dairy-free.
