Grandmas Gourmet Cranberry Pudding

- ---Pudding--- shopping list
- 1 cup flour shopping list
- 1/2 cup whole wheat flour shopping list
- 1 1/2 cups fresh (or thawed frozen) cranberries shopping list
- 1/2 cup molasses shopping list
- 2 tsp baking soda shopping list
- 1/2 cup boiling water shopping list
- ---Sauce--- shopping list
- 1/2 cup salted butter shopping list
- 3/4 cup sugar shopping list
- 1/2 cup evaporated skim milk (not sweetened condensed) shopping list
- 1/2 tbsp vanilla shopping list
How to make it
- ---Pudding---
- Preheat oven to 350F, and place a shallow baking pan of water on the bottom rack.
- Grease a loaf pan and set aside.
- In a medium bowl, whisk together flours, baking powder and cranberries.
- In another bowl blend together molasses, baking soda and water (mixture will foam substantially).
- Pour molasses mixture into the cranberry mix and beat quickly to blend well.
- Pour into the loaf pan.
- Bake 55 minutes.
- ---Sauce---
- In a small saucepan, melt butter.
- Stir in sugar and milk, bring to a slow boil.
- Cook 5 minutes, remove from heat and stir in vanilla.
- Serve warm over hot pudding.
