Bursting With Flavor Blueberry Coffeecake Recipe
This is an elegant yet very easy coffeecake that is easy to make but so rich in blueberry flavor. Enjoy

Ingredients
  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 stick butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • Topping:
  • 1/2 cup all purpose flour
  • 1/2 cup granulated sugar
  • 4 tablespoons butter softened
  • 1 teaspoon ground cinnamon

Directions
  1. Preheat oven to 350 then spray angel food cake pan with nonstick cooking spray.
  2. Lightly dust pan with flour.
  3. In medium mixing bowl sift together flour, sugar, baking powder and salt.
  4. In large bowl beat together milk, butter, eggs and vanilla.
  5. Beat in flour mixture a little at a time then gently fold in berries and pour into prepared pan.
  6. To prepare topping combine flour, sugar, butter and cinnamon in small bowl until a crumbly.
  7. Sprinkle topping over cake batter then bake 45 minutes.
  8. Remove from oven and let cool 5 minutes before inverting and placing on wire rack to cool.
