Hope you like the picture. Only had 4 peppers and was at that use it or loose it stage. Used diced tomato instead of stewed. It's what I had on hand.
Used ricotta cheese, again, what I had on hand.
Topped with freshly shredded mozzarella cheese.

A little bit on the soft side because of the loss of structure of not having any meat. But that little softness is to be expected.
