Ingredients

How to make it

  • Preheat oven to 350 F.
  • Place peppers in boiling water for 3 to 5 minutes.
  • Remove peppers with a slotted spoon and drain excess water.
  • Sauté onion in oil in small nonstick skillet. Reserve.
  • in a large bowl, combine rice, onion, stewed tomatoes, tomato paste, Italian seasoning, and cottage cheese.
  • Place peppers in a 13"x9"x2" baking dish.
  • Spoon cottage cheese/rice mixture into pepper shells.
  • Sprinkle each pepper half with 1 tablespoon shredded cheese.
  • Bake for about 25 minutes or until heated through.

    I used red, yellow, and green peppers - two of each. Delicious with a buttered bread and very colorful!

    This sounds really good! I like the idea of boiling the peppers to soften them a bit! The filling sounds great also! I've been looking for a good stuffed pepper recipe, so I may have to try this one!

    These are very good for a meatless stuffed pepper.
    A little bit on the soft side because of the loss of structure of not having any meat. But that little softness is to be expected.

    Made these today. Waiting to cool for a taste test.

    Hope you like the picture. Only had 4 peppers and was at that use it or loose it stage. Used diced tomato instead of stewed. It's what I had on hand.

    Used ricotta cheese, again, what I had on hand.

    Topped with freshly shredded mozzarella cheese.
