Ingredients
  • 6 peppers (your choice of color) with the tops cut off and the seeds removed
  • 1 medium chopped onion
  • 1 tsp olive oil
  • 2 cups cooked rice (white or brown)
  • 1 can (14.5 oz) stewed tomatoes
  • 2 Tbsp tomato paste
  • 1 Tbsp dried Italian seasoning
  • 1 cup cottage cheese
  • 3/4 cup shredded cheese of your choice
  • 8 cups boiled water
  • salt and pepper to taste

Directions
  1. Preheat oven to 350 F.
  2. Place peppers in boiling water for 3 to 5 minutes.
  3. Remove peppers with a slotted spoon and drain excess water.
  4. Sauté onion in oil in small nonstick skillet. Reserve.
  5. in a large bowl, combine rice, onion, stewed tomatoes, tomato paste, Italian seasoning, and cottage cheese.
  6. Place peppers in a 13"x9"x2" baking dish.
  7. Spoon cottage cheese/rice mixture into pepper shells.
  8. Sprinkle each pepper half with 1 tablespoon shredded cheese.
  9. Bake for about 25 minutes or until heated through.

Made these today. Waiting to cool for a taste test.

Hope you like the picture. Only had 4 peppers and was at that use it or loose it stage. Used diced tomato instead of stewed. It's what I had on hand.

Used ricotta cheese, again, what I had on hand.

Topped with freshly shredded mozzarella cheese.


These are very good for a meatless stuffed pepper.
A little bit on the soft side because of the loss of structure of not having any meat. But that little softness is to be expected.


This sounds really good! I like the idea of boiling the peppers to soften them a bit! The filling sounds great also! I've been looking for a good stuffed pepper recipe, so I may have to try this one!


Oh, I'll have to give this a try for our meatless night. Lovely and I appreciate the reviews, too.


Not the same old stuffed peppers indeed!. I'll give them a go, as soon as I get into town to buy a heap of pepers. Cheers!
