Ingredients

How to make it

  • Roast Eggplants on Grill / or over gas burner until tender (skin will be burned - that's OK)
  • Peel & Chop Roasted Eggplants
  • Add Chopped Eggplant, Chopped Garlic, Tahini, Lemon Juice, and Salt to food processor and pulse/puree until smooth
  • Adjust Lemon Juice & Salt to taste.
  • Move to serving bowl, drizzle with Olive Oil and dust with Paprika.
  • Serve with warm Pita Chips, Corn Chips, or Vegetable Sticks.

    I'm back to say that this was a perfect addition to my dinner party!I made it exactly as written. I love the smokey flavor of the barbequed eggplant and the slight hint of sesame from the tahini! I will definitely be making this often! I added my photo.

    I made this last weekend. I didn't have tahini, but I put a couple of large hand fulls of roasted sesame seeds instead. It took a while to get the sesame to smooth out in the blender, but it came up smooth as ever. It was cleaned up quick time. I will be whipping this up some more. Cheers!

    We have the same recipe in Greece, except we call it Melitzanosalata...trying saying that 3 times fast...so even though I'm Greek, I say Baba Ghanoush. Nice post!
