Ingredients

2 cups all purpose flour

1/8 teaspoon sea salt

1-1/2 cups apple juice

2 tablespoons vegetable oil

2 large eggs

1/2 cup honey

2 teaspoons baking powder

1 granny smith apple peeled and grated

2 teaspoons vegetable oil

Directions

In large bowl combine flour, salt, apple juice, oil, eggs, honey and baking powder.

Mix on medium speed with hand mixer until smooth then fold in grated apple by hand.

In heavy skillet add oil and heat until sizzling.

Drop batter by spoonful into pan and cook until bubbles appear then flip.

Serve immediately with honey or maple syrup.
