Squash Casserole Recipe

Ingredients

3 cups cooked squash, drained, with all the water squeezed out (I saute zucchini and yellow squash til soft and broken down; then wrap in a towel and squeeze out water)

1 large onion

4 Tbsp butter

1 cup ritz crackers (plusmore for topping)

1/2 cup sour cream

1/2 tsp garlic powder

1/2 tsp salt

black pepper, to taste

1 cup grated sharp cheddar

Directions

Preheat oven to 350.

Saute onion in butter 5 minutes

Remove from pan and mix all ingredients together

Pour into buttered dish and top with additional cracker crumbs

Bake for 30 minutes
