How to make it

  • Soak rice in cold water 1 hour.
  • Preheat oven to 350 degrees.
  • In a dutch oven heat oil.
  • Season chicken in dutch oven with salt, pepper, and lime juice.
  • Brown chicken 5 minutes on each side.
  • Remove chicken and set on paper towels.
  • Add onions, peppers and garlic and cook until translucent.
  • Add sauce, cumin, and bay leaf and cook 5 minutes.
  • Add chicken, wine, and sherry and cook 5-8 minutes.
  • Add stock and bring to a boil.
  • Drain rice and add to pot with saffron.
  • Return to a boil and cover.
  • Cook in oven 20 minutes.
  • Remove bay leaf and fluff with a fork
