arroz con pollo

- 1 1/2 c arborio rice shopping list
- 1/2 c olive oil shopping list
- 3 lbs bone-in chicken, skin removed shopping list
- salt and pepper shopping list
- lime juice shopping list
- 1 chopped onion shopping list
- 1 chopped poblano pepper shopping list
- 3 cloves minced garlic shopping list
- 1 c tomato sauce shopping list
- 1 tsp cumin shopping list
- 1 bay leaf shopping list
- 1/2 c white wine shopping list
- 1/2 c sherry shopping list
- 3 c chicken stock shopping list
- 5 saffron threads shopping list
How to make it
- Soak rice in cold water 1 hour.
- Preheat oven to 350 degrees.
- In a dutch oven heat oil.
- Season chicken in dutch oven with salt, pepper, and lime juice.
- Brown chicken 5 minutes on each side.
- Remove chicken and set on paper towels.
- Add onions, peppers and garlic and cook until translucent.
- Add sauce, cumin, and bay leaf and cook 5 minutes.
- Add chicken, wine, and sherry and cook 5-8 minutes.
- Add stock and bring to a boil.
- Drain rice and add to pot with saffron.
- Return to a boil and cover.
- Cook in oven 20 minutes.
- Remove bay leaf and fluff with a fork
