Ingredients
  • 4 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 1/2 cups flour
  • 1 tsp salt
  • 1 1/2 tsp cinnamon
  • 3/4 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp vanilla
  • 2 cups grated zucchini
  • 1 cup rasins(optional)
  • 1 cup walnuts(optional)

Directions
  1. Cream together eggs, sugar, and oil.
  2. In seperate bowl add all dry ingredients together.
  3. Mix dry mixture into egg mixture.
  4. Add vanilla, grated zucchini, nuts and rasins.
  5. Pour into 2 greased and floured 8 inch loaf pans.
  6. Bake at 350 for 50-55 minutes or until toothpick tests clean.
  7. Also can make:
  8. muffins, bake 20-25 min
  9. small loafs, bake 30-35 min
