How to make it

  • Cream together eggs, sugar, and oil.
  • In seperate bowl add all dry ingredients together.
  • Mix dry mixture into egg mixture.
  • Add vanilla, grated zucchini, nuts and rasins.
  • Pour into 2 greased and floured 8 inch loaf pans.
  • Bake at 350 for 50-55 minutes or until toothpick tests clean.
  • Also can make:
  • muffins, bake 20-25 min
  • small loafs, bake 30-35 min

    Great recipe!!! The only thing I did differently was add half a cup of milk. Prior, the batter was so thick that my mixer was having a touch time stirring it. But the result was delicious! Made it into three small loaves and baked for 45-50 minutes. We've already eaten half of one of the loaves with some fresh butter! Love this!!

    Baked today...followed recipe without the additional raisins and walnuts. I added some milk to the batter...it was really thick prior to the milk. The bread is very good. Friends and family loved this bread. I severed it with honey butter.
